The Quality Standard Seals and Labeling
Firstly, to guarantee that the seal is effectively the standard seal that guarantees that it is an Iberian Ham or Shoulder, you must inform about the type of product in question (Ham or Shoulder), the diet the animal has had ( acorn, field bait or bait), the breed of the specimen and finally must refer to the quality standard promoted by this system (RD 4/2014) and the ASICI logo as the implementer of the regulation.
There are four different Seals, we are going to comment on them.
The Black Seal is made of 100% Iberico Bellota Ham. A seal that certifies that the mother and father of the pig in question are 100% Iberian Breed inscribed in the Genealogical Book; and that the animal, in its fattening stage, fed on acorns and other natural resources of the pasture.
The Red Seal is that of Iberico Bellota Ham, which comes from animals of 75% of the Iberian breed or from animals of 50% Iberian breed and that in their fattening stage fed on acorns and other resources.
The Green Seal identifies the Cebo de Campo Ham and can come from 100% Iberian or 75% or 50% Iberian breed fed in its fattening stage with cereal and legume feed and with field herbs.
The White Seal identifies Iberian Cebo Ham and can come from 100% Iberian or 75% or 50% Iberian breed specimens, fed on farms based on cereal and legume feed.
